Quick, easy, healthy, super cheap, and ready so fast that our children don't have time to drive us bonkers while they are waiting for food!! We also usually have chicken in the freezer that I have cooked ahead of time, shredded, then frozen. Ready-made rotisserie chicken will save tons of time too! We like to serve these with Spanish Rice and salsa!
Quick Chicken & Cheese Quesadillas Recipe

Ingredients
- 4 large flour tortillas
- 2 cups cooked chicken, shredded (or 1 rotisserie chicken, shredded)
- 1 cup shredded cheese (fiesta, cheddar, jack, or any cheese combo)
- butter or cooking spray for pan
Directions
- Heat large skillet over medium heat. Grease with butter or with cooking spray.
- Add 1/2 cup chicken over half the tortilla. Sprinkle 1/4 cup cheese over chicken.
- Using a spatula, fold opposite side of tortilla over to cover the chicken and cheese. Press down with spatula.
- Cook for 2 minutes, flip quesadilla over with spatula, and continue cooking on opposite side for 2 minutes. (The outside of the quesadilla should be golden and crisp, and cheese melted inside)
- Repeat with remaining tortillas.

To Freeze:
If you have any ingredients remaining, you can freeze them to have all the ingredients gathered and ready to go! Simply place cheese and chicken in separate small freezer bags. Place tortillas in a large freezer bag. Place the chicken and cheese bags inside the larger tortilla bag.
To Thaw:
Remove quesadilla bag from freezer the night before you wish to use it. Cook according to recipe directions.
